| INGREDIENTS: | ||
| hickory chips | 2 tablespoons salt | 2 tablespoons paprika |
| 1-1/2 teaspoons pepper | 4 (3 to 3-1/2 pound) broiler-fryers, split | 3 tablespoons vegetable oil |
| 1 tablespoon vinegar | 1 teaspoon hot sauce | |
| 1 | Soak hickory chips in water to cover for at least 1 hour. Drain. |
| 2 | Combine salt, paprika, and pepper, stirring well; sprinkle over chicken. Combine vegetable oil, vinegar, and hot sauce, stirring well. Set chicken and oil mixture aside. |
| 3 | Prepare fire in a covered grill; let burn until coals are gray. Rake coals to one end of grill; place wood chips over hot coals. Place chicken at opposite end of grill, and cover with lid. Grill over indirect heat 3 to 3-1/2 hours or until done, turning chicken occasionally. Baste chicken with oil mixture during last hour of grilling time. |
