| INGREDIENTS: | ||
| 1/4 c molasses | 3/4 c nonfat milk | 1 T canola oil |
| 2 egg whites | 1 c pure wheat bran | 1 c whole wheat flour |
| 2 tsp baking powder | 1/4 tsp salt | 1/8 tsp baking soda |
| 1/4 c raisins | 1/4 c chopped walnuts | |
| 1 | Combine molasses, milk, oil and egg whites in bowl and beat until well combined. Stir in bran and set aside until liquid is absorbed. Sift together flour, baking powder, salt and baking soda. Stir in raisins and walnuts. Add to bran mixture and stir only until moistended. Spoon batter into muffin tin lined with foil cups. Bake at 375 F. about 20 minutes or until done. |
