Breast of Chicken Jubilee

INGREDIENTS:
4 chicken breast halves 1/4 teaspoon salt 1/4 teaspoon garlic salt
1/4 teaspoon pepper 1/4 cup butter or margarine 2 medium onions, sliced
1 (12-ounce) bottle chili sauce 1/2 cup firmly packed brown sugar 1/2 cup raisins
1 tablespoon Worcestershire sauce 1 cup dry sherry 1 (16-ounce) can pitted dark sweet cherries, drained
hot cooked rice



1 Sprinkle chicken breast halves evenly with salt, garlic salt, and pepper. Melt butter in a large skillet over medium heat; add chicken breast halves, and cook until golden brown. Place chicken in a 2-1/2 quart casserole.
2 Combine onion, chili sauce, sugar, raisins, and Worcestershire sauce in a medium bowl; spoon onion mixture over chicken. Cover and bake at 325 F. for 1 hour. Add sherry and sweet cherries to chicken mixture; cover and bake an additional 15 minutes or until chicken is done.
3 Remove chicken mixture to a serving platter, using a slotted spoon. Serve chicken with hot cooked rice.
