Garlic-Broiled Shrimp

INGREDIENTS:
2 pounds unpeeled large fresh shrimp 1/2 cup butter or margarine, melted 1/2 cup olive oil
1/4 cup chopped fresh parsley 1 tablespoon chopped green onions 3 cloves garlic, minced
1 tablespoon plus 1-1/2 teaspoons fresh lemon juice freshly ground pepper hot cooked rice



1 Peel and devein shrimp. Set aside.
2 Combine butter and next 5 ingredients in a large shallow dish. Add shrimp, tossing to coat well. Cover and marinate in refrigerator at least 30 minutes, stirring occasionally.
3 Arrange shrimp in a single layer in a large, shallow baking dish; brush marinade over shrimp. Broil shrimp 4 inches from heat 3 minutes. Turn shrimp, and broil an additional 3 minutes or until shrimp turn pink. Sprinkle with pepper. Serve with pan drippings over hot cooked rice.
