| INGREDIENTS: | ||
| 1 tablespoon butter or margarine | 1/3 cup chopped onion | 1 tablespoon plus 1 teaspoon all-purpose flour |
| 1 cup apple cider or apple juice | 3 tablespoons sweet pickle relish | 1 tablespoon catsup |
| 1/4 teaspoon salt | 1/4 teaspoon dried whole basil | 1/8 teaspoon ground allspice |
| dash of ground cloves | 4 pounds beef short ribs | |
| 1 | Melt butter in a medium saucepan over low heat; add chopped onion, and saute until onion is tender. Add flour, stirring well. Cook 1 minute, stirring constantly. Gradually add apple cider, and cook over medium heat, stirring constantly, until mixture thickens. Stir in remaining ingredients except ribs. Remove sauce from heat, and set aside. |
| 2 | Cut ribs into serving-size pieces, and grill over low coals 1 hour and 10 minutes. Baste ribs with sauce, and grill an additional 20 minutes or until desired degree of doneness. Turn and baste frequently with sauce. Serve ribs with remaining sauce. |
