| INGREDIENTS: | ||
| 1 cup canned black beans (not drained) | 1 tbsp balsamic vinegar, or lime juice, or fresh seville orange juice | salt and fresh-ground black pepper to taste |
| 2 tbsp chopped red onion | 1 sweet red pepper, seeded and diced | |
| 1 | Mix beans and vinegar, lime juice, or Seville orange juice together. Puree in a blender or food processor. Add salt and pepper to taste. Warm. |
| 2 | Spoon on a plate and place chicken or fish over the sauce. Sprinkle the top with the onion and red bell pepper. |
