Easy Black Bean Puree

INGREDIENTS:
1 cup canned black beans (not drained) 1 tbsp balsamic vinegar, or lime juice, or fresh seville orange juice salt and fresh-ground black pepper to taste
2 tbsp chopped red onion 1 sweet red pepper, seeded and diced



1 Mix beans and vinegar, lime juice, or Seville orange juice together. Puree in a blender or food processor. Add salt and pepper to taste. Warm.
2 Spoon on a plate and place chicken or fish over the sauce. Sprinkle the top with the onion and red bell pepper.
