INGREDIENTS:
2/3 cup diced ripe pineapple 1/2 cup seeded and diced yellow bell pepper 1/2 cup diced red onion
1/2 cup diced hot pepper 1/2 cup unsweetened shredded dry coconut 1 tbsp sherry vinegar



1 Combine all ingredients in bowl. Cover and let stand at room temperature for at least 10-15 minutes until ready to serve.
