Banana Muffins

INGREDIENTS:
2 cups flour 1/4 cup sugar 1-1/2 t baking powder
1/2 t baking soda 1/2 t salt 1 egg, beaten
3/4 cup milk 1/2 cup banana, mashed 1/3 cup macadamia nuts, chopped
1/4 cup shortening, melted 2 t lemon juice



1 Sift together flour, sugar, baking powder, baking soda and salt. Combine egg, banana, shortening, and lemon juice. Pour into flour mixture. Stir only until flour is moistened. Put liners in muffin tins. Fill each muffin cup 3/4 full. Bake at 425 F for 20 minutes. Serve warm.
