Milk Gravy

INGREDIENTS:
1/4 cup chicken or beef drippings 1/4 cup flour 1/4 teaspoon salt
1-1/4 cups milk



1 In 1-qt glass measure, measure drippings. Microwave at high 1 to 2 minutes, until hot. Add flour and salt. Stir well. Stir in milk slowly. Microwave at high 6 to 8 minutes, stirring every minute.
2 CREAM GRAVY: Prepare Milk Gravy as above, except, instead of 1-1/4 cups milk, use 2/3 cup milk and 2/3 cup whipping cream.
3 BROWN GRAVY: Prepare Milk Gravy or Cream Gravy as above, using beef or lamb drippings and adding 1/2 teaspoon brown bouquet sauce.
