Black Bean Salsa

INGREDIENTS:
1 16-ounce can black beans, drained and rinsed 2 cups seeded and chopped fresh tomatoes 1/2 cup chopped black olives
1 cup chopped onion 1/2 to 1-1/2 tablespoons chopped cilantro, depending on taste 3 fresh jalapeno peppers, seeded and chopped
4 garlic cloves, minced 1 tablespoon fresh lemon juice 1/4 teaspoon salt
1/4 teaspoon ground cumin 1/4 teaspoon ground pepper 2 tablespoons virgin olive oil
1-1/2 cups grilled chicken breast, diced (optional)



1 Combine all ingredients and refrigerate at least 2 or 3 hours before serving.
