Shrimp Newburg

INGREDIENTS:
2 Tbsp butter 2 Tbsp flour 1/2 cup milk
2 hard-boiled eggs salt to taste pepper to taste
1/4 cup sherry 2 cups cooked shrimp



1 In saucepan, melt butter. Stir in flour until smooth. Over low heat, stir in milk until smooth, continuing to stir until mixture thickens.
2 Cut up egg whites finely. (Use yolks in another dish.) Add chopped whites to milk sauce.
3 Stir in salt, pepper, sherry, and shrimp.
4 Serve over hot rice.
