| INGREDIENTS: | ||
| 2 Tbsp butter | 2 Tbsp flour | 1/2 cup milk |
| 2 hard-boiled eggs | salt to taste | pepper to taste |
| 1/4 cup sherry | 2 cups cooked shrimp | |
| 1 | In saucepan, melt butter. Stir in flour until smooth. Over low heat, stir in milk until smooth, continuing to stir until mixture thickens. |
| 2 | Cut up egg whites finely. (Use yolks in another dish.) Add chopped whites to milk sauce. |
| 3 | Stir in salt, pepper, sherry, and shrimp. |
| 4 | Serve over hot rice. |
