| 3 cups shelled, fresh green peas, cleaned (about 3 lbs unshelled) | 1 cup water | 1/4 lb salt pork |
| 1/2 tsp salt | 2 Tbsp butter, optional | |
| 1 | Combine green peas, water, salt pork, and salt in a small saucepan. Bring to a boil. |
| 2 | Reduce heat. Cover and simmer 25 minutes, or until peas are tender. Drain. |
| 3 | Add butter, if desired, and toos lightly. |
