INGREDIENTS:
6 cups flour 675g 2 cups sugar 425g 6 tsps baking powder 30ml
4 tblsps margarine 60ml 2 eggs 2 tsps ginger 10ml
1 cup stout 250ml 2 cups mixed fruits 500ml or 1/2 lb (2 cups) raisin 225g
1 cup milk 250ml 1 tsp orange rind 5ml



1 Prepare tins (2-8" round). Grease with shorting.
2 In a large mixing bowl, put flour, sugar, baking powder, and other dry ingredients. Mix well.
3 Melt margarine over low heat. Remove from heat. Add stout and eggs.
4 Add liquid mixture (step 3) to dry ingredients. Mix well. Mixture should be soft.
5 Add milk to get a soft but not dropping consistency.
6 Put into greased loaf tins. (Let rest for about 30-45 minutes)
7 Bake at 350 F/180 C for 1-1/2 hours.
