| INGREDIENTS: | ||
| 6 cups flour 675g | 2 cups sugar 425g | 6 tsps baking powder 30ml |
| 4 tblsps margarine 60ml | 2 eggs | 2 tsps ginger 10ml |
| 1 cup stout 250ml | 2 cups mixed fruits 500ml or | 1/2 lb (2 cups) raisin 225g |
| 1 cup milk 250ml | 1 tsp orange rind 5ml | |
| 1 | Prepare tins (2-8" round). Grease with shorting. |
| 2 | In a large mixing bowl, put flour, sugar, baking powder, and other dry ingredients. Mix well. |
| 3 | Melt margarine over low heat. Remove from heat. Add stout and eggs. |
| 4 | Add liquid mixture (step 3) to dry ingredients. Mix well. Mixture should be soft. |
| 5 | Add milk to get a soft but not dropping consistency. |
| 6 | Put into greased loaf tins. (Let rest for about 30-45 minutes) |
| 7 | Bake at 350 F/180 C for 1-1/2 hours. |
