Potato Pound (Pone)

INGREDIENTS:
2 lbs sweet potatoes (grated)900g 2-4ozs root ginger (grated) 3/4-1 lb (2 cups) brown sugar 450g
1 cup raisin (optional) 112g 2 tsps vanilla 10ml 1 tsp nutmeg 5ml
2 tblsps melted margarine 30ml 4 cups milk (evaporated or coconut)



1 Grease baking tins or pyrex dishes.
2 Preheat oven to 450 F/225 C.
3 Wash, peel and grate potatoes.
4 Grate coconut. Add four cups, squeeze to extract milk or use evaporated milk.
5 Put grated potato into large bowl. Add sugar, vanilla, nutmeg, raisin and ginger. Mix well.
6 Add milk and margarine. Mix well. Put in baking dishes/pans.
7 Put on bottom shelf of oven after 30-45 minutes, then remove to top shelf, lower oven to 350 F.
8 Cook until brown or a knife inserted comes out clean. About 75-90 minutes.
