Banana Cake

INGREDIENTS:
3 medium ripe bananas (1-1/2 cups) 375g 1 cup margarine 225g 2 cups sugar 450g
3 eggs 1 tsp vanilla 5ml 3 cups all purpose flour 340g
1 tsp baking soda 5ml 2 tsps baking powder 10ml 1 tsps nutmeg 5ml
1/2 tsp cinnamon 2ml 1/2 cup raisins (optional) 5ml pinch of salt
1/2 cup sour cream (optional) 125ml



1 Prepare cake tins (grease and line).
2 Preheat oven to 350F/180C.
3 Wash, peel and mash bananas.
4 Cream margarine with sugar.
5 Add lightly beaten eggs, one at a time. Mix well.
6 Add lightly beaten eggs, one at a time. Mix well.
7 Add vanilla and bananas. Mix well.
8 Add flour, baking powder, baking soda, nutmeg, cinnamon, raisin and salt alternately with sour cream.
9 Put mixture into cake tin.
10 Bake for 40 minutes in a moderate oven at 350F/180C until tester comes out clean.
11 Cool before removing from cake tin.
