| INGREDIENTS: | ||
| 3 cups brown rice | 1 cup orange juice | 1 pound mushrooms, finely chopped |
| 1/4 cup flour | 1/4 teaspoon salt | 1/4 teaspoon pepper |
| vegetable oil for frying | ||
| 1 | Cook brown rice according to package directions, substituting 1 cup orange juice for 1 cup of the water. Remove from heat. |
| 2 | Stir in mushrooms, flour, salt, and pepper. |
| 3 | Using a processor or a blender, mix until rice can be formed into patties. |
| 4 | Form into 12 patties. |
| 5 | Place patties in a heavy skillet and fry in vegetable oil for about 8 to 12 minutes on each side to desired doneness. |
