Mock Gefilte Fish Balls

INGREDIENTS:
1 14.75 ounce pink salmon, drained 2 large eggs, beaten 1/2 teaspoon salt
1/4 teaspoon garlic powder 1/4 teaspoon pepper 1 onion, peeled and grated
1/4 cup matzoh meal 2 onions, peeled and sliced 3 carrots, sliced
2 cups water



1 Place salmon in a large bowl. Add eggs, salt, garlic powder, and pepper. Mix in grated onion and matzoh meal. Set aside.
2 In a saucepan, place the sliced onins, carrots, and water. Heat to boiling, then lower heat to a simmer.
3 Form salmon mixture into 1-inch balls. Gently place fish balls in the heated water. Increase heat once more to a bowl, then lower heat to medium. Cover and cook for 20 to 30 minutes.
4 Remove from heat and let cool for 15 minutes. Place fish balls in a bowl and chill in refrigerator before serving.
5 Garnsih fish balls with cooked carrots, cut into circles.
