| 1 (6-ounce) package semisweet chocolate morsels | 3 tablespoons apricot nectar | 2 tablespoons amaretto |
| 2 eggs | 2 egg yolks | 1 tablespoon plus 1-1/2 teaspoons instant coffee granules |
| 1/4 cup sugar | 3/4 teaspoon almond extract | 1/2 teaspoon vanilla extract |
| 2 cups whipping cream, divided | 2 tablespoons powdered sugar | 1/8 teaspoon amaretto |

| 1 | Combine chocolate morsels, apricot nectar, and 2 tablespoons amaretto in top of a double boiler; bring water to a boil. Reduce heat to low; cool until chocolate melts. Let cool. |
| 2 | Combine eggs and next 5 ingredients in container of an electric blender. Add 1 cup whipping cream; cover and process until well blended. Add chocolate mixture, and blend until smooth. Pour mixture into individual serving dishes; chill until set. |
