Chocolate Marshmallow Fondue

INGREDIENTS:
2oz/50g unsweetened chocolate 20 marshmallows, quartered 6 tbsp/90ml corn syrup
2 tbsp/25ml half-and-half (10%) cream 1 tbsp/15ml butter, melted 1 tsp/5ml vanilla extract



1 In the top of a double boiler, over hot (not boiling water), melt together chocolate, marshmallows, corn syrup and cream, stirring constantly until smooth. Remove from heat. Stir in butter and vanilla. Transfer immediately to dessert fondue pot over candle flame.
2 Spear a piece of fruit or cake with fondue fork and dip in fondue.
