| toothpicks | 12oz/650g scallops | 1 lb/500g sliced bacon, each slice cut into thirds |
| oil for fondue | ||
| 1 | Wrap a scallop with a piece of bacon; secure with a toothpick and place on platter. Continue until all scallops are wrapped in bacon. |
| 2 | In a saucepan heat oil to 375 F (190C) and transfer to fondue pot (or heat oil in an electric fondue). Do not fill fondue pot more than half full. Before using, allow oil to cool slightly to 350 F (180C). |
| 3 | Spear bacon-wrapped scallop with fondue fork and remove toothpicks. Fondue in moderately hot oil for 3 to 5 minutes or until bacon starts to brown. |
