Bacon-Wrapped Scallop Fondue

INGREDIENTS:
toothpicks 12oz/650g scallops 1 lb/500g sliced bacon, each slice cut into thirds
oil for fondue



1 Wrap a scallop with a piece of bacon; secure with a toothpick and place on platter. Continue until all scallops are wrapped in bacon.
2 In a saucepan heat oil to 375 F (190C) and transfer to fondue pot (or heat oil in an electric fondue). Do not fill fondue pot more than half full. Before using, allow oil to cool slightly to 350 F (180C).
3 Spear bacon-wrapped scallop with fondue fork and remove toothpicks. Fondue in moderately hot oil for 3 to 5 minutes or until bacon starts to brown.
