| INGREDIENTS: | ||
| 1 cup sugar 225g | 1/2 cup vegetable oil margarine 112g | 2 eggs |
| 2 cups flour 450g | 2 tblsps baking powder 10ml | 1/2 tsp baking soda 2ml |
| 1 tsp cinnamon 5ml | 1 tsp grated orange peel 5ml | 2 cups grated carrots 450g |
| 1 cup raisin (optional) 225g | ||
| 1 | Preheat oven to 350 F/180C. |
| 2 | Prepare a small cake tin (8" 2"). Grease and flour tin. |
| 3 | Cream fat and sugar until well mixed. |
| 4 | Beat eggs. Add to fat and sugar mixture. Mix well. |
| 5 | Add dry ingredients to egg mixture (fold in). |
| 6 | Add grated orange peel and grated carrots. |
| 7 | Put batter in greased pan. |
| 8 | Bake at 350F/180C for 35-40 minutes. |
