Carrot Cake

INGREDIENTS:
1 cup sugar 225g 1/2 cup vegetable oil margarine 112g 2 eggs
2 cups flour 450g 2 tblsps baking powder 10ml 1/2 tsp baking soda 2ml
1 tsp cinnamon 5ml 1 tsp grated orange peel 5ml 2 cups grated carrots 450g
1 cup raisin (optional) 225g



1 Preheat oven to 350 F/180C.
2 Prepare a small cake tin (8" 2"). Grease and flour tin.
3 Cream fat and sugar until well mixed.
4 Beat eggs. Add to fat and sugar mixture. Mix well.
5 Add dry ingredients to egg mixture (fold in).
6 Add grated orange peel and grated carrots.
7 Put batter in greased pan.
8 Bake at 350F/180C for 35-40 minutes.
