Crisped Almond Apples

INGREDIENTS:
5 large Granny Smith or other cooking apples 3/4 cup plus 2 tablespoons sugar, divided 1 tablespoon plus 1-1/2 teaspoons lemon juice
1 cup all-purpose flour 1/4 teaspoon salt 1/4 teaspoon ground cinnamon
2/3 cup finely chopped blanched almonds 1/2 cup unsalted butter or margarine, melted 3/4 teaspoon vanilla extract
1-1/2 cups whipping cream 2 tablespoons sugar



1 Peel and core apples; cut into 1-inch-thick slices. Combine apple slices, 2 tablespoons sugar, and lemon juice in a large bowl; toss gently. Arrange apple slices in a greased 13x9x2-inch baking dish in 3 lengthwise rows. Set aside.
2 Combine flour, 3/4 cup sugar, salt, and cinnamon in a medium mixing bowl, stirring well. Stir in almonds. Add melted butter and vanilla; stir until mixture resembles coarse meal. Sprinkle almond mixture evenly over apples. Bake at 400 for 30 to 35 minutes or until golden brown. Cool 10 to 15 minutes on a wire rack.
3 Beat whipping cream until foamy. Gradually add 2 tablespoons sugar, beating until soft peaks form. Serve warm apples with sweetened whipped cream.
