Papaw Upside Down Cake

INGREDIENTS:
2 tbsps margarine or butter 30g 1/3 cup brown sugar 75g 6 slices papaw cut small (2")
2-1/2 cups sifted cake flour 3 tsps baking powder 15ml 1/2 cup margarine 112g
1-1/2 cup sugar 375g 2 eggs (well beaten) 1 cup milk 250ml
1 tsp vanilla 5ml pinch of salt 0.5ml



1 Melt margarine or butter in cake pan 8x2" sprinkle with brown sugar.
2 Put papaw slices in bottom of small cake pan.
3 Put sugar and margarine in mixing bowl cream until fluffy and light.
4 Beat eggs until frothy. Add to margarine and sugar.
5 Add essence. Mix well.
6 Fold in sifted flour, baking powder and salt, alternately with milk.
7 Pour on top melted margarnie and papaw.
8 Bake in oven 350 F/180 C until knife comes out clean.
