Shortbread (Un Kurabiyesi)

INGREDIENTS:
1 cup flour 1 stick butter 1/3 cup rice flour
4 Tbsp sugar plus extra for sprinkling 16 whole blanched almonds



1 Preheat a 325 F oven and butter a cookie sheet. Blend the butter into the flour until the mixture resembles bread crumbs. Add the rice flour and mix well. Stir in the sugar and knead to a smooth dough.
2 Break walnut-size pieces from the dough and flatten with your fingers, push an almond into the center of each one, and place on the cookie sheet.
3 Bake in the oven for 25 to 30 minutes, until pale brown in color. Sprinkle with a little sugar. Transfer the cookies to a wire rack to cool and store in an airtight container.
