Preheat a 325 F oven and butter a cookie sheet. Blend the butter into the flour until the mixture resembles bread crumbs. Add the rice flour and mix well. Stir in the sugar and knead to a smooth dough. |

Break walnut-size pieces from the dough and flatten with your fingers, push an almond into the center of each one, and place on the cookie sheet. |
