Belizean Stewed Beans (Red Kidney)

INGREDIENTS:
1 lb beans 450g 8 cups water 1 tsp salt 5ml
1 onion (sliced) 1/2 tsp black pepper 2ml 1/2 tsp thyme 2ml
1 small pig's tail (remove excess fat and cut up small) (optional) or 2 ozs salt beef 2 cloves garlic (crushed) 1 tsp margarine or cooking oil 5ml



1 In a large pot, wash and soak beans in 8 cups water for about 6-8 hours or overnight.
2 Add onins, pig's tail and garlic. Boil until beans are tender or use pressure cooker.
3 Test for softness. When soft, season with salt, pepper and thyme.
4 Add coconut milk. Cook for another 10-15 minutes until beans are thick and bubbly.
