| INGREDIENTS: | ||
| 1 lb beans 450g | 8 cups water | 1 tsp salt 5ml |
| 1 onion (sliced) | 1/2 tsp black pepper 2ml | 1/2 tsp thyme 2ml |
| 1 small pig's tail (remove excess fat and cut up small) (optional) or 2 ozs salt beef | 2 cloves garlic (crushed) | 1 tsp margarine or cooking oil 5ml |
| 1 | In a large pot, wash and soak beans in 8 cups water for about 6-8 hours or overnight. |
| 2 | Add onins, pig's tail and garlic. Boil until beans are tender or use pressure cooker. |
| 3 | Test for softness. When soft, season with salt, pepper and thyme. |
| 4 | Add coconut milk. Cook for another 10-15 minutes until beans are thick and bubbly. |
