Buffet Manicotti

INGREDIENTS:
8 manicotti shells 3 tablespoons butter or margarine 3 tablespoons all-purpose flour
2 cups milk 1-1/2 cups (6 ounces) shredded or Cheddar cheese 1/4 teaspoon salt
1/4 teaspoon Worcestershire sauce 1-1/2 cups chopped cooked chicken 1 cup small-curd cottage cheese
1 egg, beaten 1/4 cup minced onion 2 tablespoons minced fresh parsley
1/2 teaspoon dried Italian seasoning 2 tablespoons butter or margarine, melted 1/8 teaspoon paprika
1 cup soft breadcrumbs



1 Cook manicotti shells according to package directions; drain and set aside.
2 Melt 3 tablespoons butter in a saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickend and bubbly. Stir in cheese, salt, and Worcestershire sauce, stirring until cheese melts. Set aside; keep warm.
3 Combine chicken, cottage cheese, egg, minced onion, parsley, and Italian seasoning in a medium bowl; stuff manicotti shells with chicken mixture.
4 Spoon 3/4 cup cheese sauce into a lightly greased 13x9x2-inch baking dish. Arrange stuffed shells over sauce. Spoon remaining sauce over shells.
5 Combine 2 tablespoons melted butter and paprika in a small bowl; add breadcrumbs, and stir well.
6 Sprinkle breadcrumb mixture evenly over manicotti. Bake at 350 for 30 minutes or until manicotti is thoroughly heated and lightly browned.
