| INGREDIENTS: | ||
| 1 small pumpkin/squash | 1/2 cup brown sugar or honey 125ml | 2 tbsps margarine 30ml |
| 2 tbsp water 30ml | 1/2 tsp nutmeg 2ml | 1 tsp black pepper 1ml |
| 1 | Wash and cut pumpkin in thin slices. |
| 2 | Remove seeds and fibre. |
| 3 | Boil in just sufficiently salted water to cover pumpkin (about 20-30 minutes.) |
| 4 | In a small pot put brown sugar, margarine, water and nutmeg. Stir until sugar has dissolved. |
| 5 | Arrange pumpkin and squash slices in greased baking dish. Sprinkle with black pepper. |
| 6 | Spoon sugar mixture over pumpkin/squash. |
| 7 | Bake in moderate oven at 350 degrees F/180 degrees C for 10-15 minutes. |
| 8 | Serve warm. Accompaniment to main dish. |
