Glazed Squash Pumpkin

INGREDIENTS:
1 small pumpkin/squash 1/2 cup brown sugar or honey 125ml 2 tbsps margarine 30ml
2 tbsp water 30ml 1/2 tsp nutmeg 2ml 1 tsp black pepper 1ml



1 Wash and cut pumpkin in thin slices.
2 Remove seeds and fibre.
3 Boil in just sufficiently salted water to cover pumpkin (about 20-30 minutes.)
4 In a small pot put brown sugar, margarine, water and nutmeg. Stir until sugar has dissolved.
5 Arrange pumpkin and squash slices in greased baking dish. Sprinkle with black pepper.
6 Spoon sugar mixture over pumpkin/squash.
7 Bake in moderate oven at 350 degrees F/180 degrees C for 10-15 minutes.
8 Serve warm. Accompaniment to main dish.
