| 1 pound eye of round or sirloin tip roast | 1/2 tespoon salt | pinch of sugar |
| freshly ground black pepper to taste | 1 stalk lemongrass, white part only, very thinly sliced | 4 tablespoons nuoc mam (fish sauce) |
| 1 | Slice the beef into long thin strips across the grain. Place the meat in a bowl with the remaining ingredients and marinate for 1 hour. |
