| INGREDIENTS: | ||
| 1/2 lb callaloo (leaves and stems) 225g | 1/2 medium onion (chopped) | 2 cloves garlic (crushed) |
| 1/2 tsp chicken seasoning 5ml or 1/2 tsp salt 2ml | 1 tblsp margarine 15ml | 1 tblsp yellow ginger (optional) 15ml |
| 1 | Wash callaloo, leaves and stems. |
| 2 | Hold together in a bundle and chop into small pieces (leaves and stems). |
| 3 | Chonko (saute) onion and garlic in margarine. Add chopped callaloo. |
| 4 | Season with chicken seasonings/salt, and yellow ginger (optional). |
| 5 | Cook over low heat for 10-15 minutes. Add a little water if necessary. |
| 6 | Serve with white rice and meat. |
