Fried Callaloo

INGREDIENTS:
1/2 lb callaloo (leaves and stems) 225g 1/2 medium onion (chopped) 2 cloves garlic (crushed)
1/2 tsp chicken seasoning 5ml or 1/2 tsp salt 2ml 1 tblsp margarine 15ml 1 tblsp yellow ginger (optional) 15ml



1 Wash callaloo, leaves and stems.
2 Hold together in a bundle and chop into small pieces (leaves and stems).
3 Chonko (saute) onion and garlic in margarine. Add chopped callaloo.
4 Season with chicken seasonings/salt, and yellow ginger (optional).
5 Cook over low heat for 10-15 minutes. Add a little water if necessary.
6 Serve with white rice and meat.
