Meatloaf (Sekana)

INGREDIENTS:
1 lb ground beef 1 lb ground pork 2 rashers bacon, sliced
1 medium onion, chopped 1 clove garlic, mashed 2 Tbs butter
2 french rolls 1/2 cup milk 1/2 tsp thyme
2 Tbs fresh parsley, chopped 2 eggs



1 Fry the bacon in a frying pan on medium till almost crisp. Add the onion and garlic and fry, stirring occasionally, till almost golden. Take off the heat.
2 Preheat the oven to 400 F.
3 In a large bowl, break the french rolls into fairly small pieces and pour in the milk. Let the bread soak up the liquid for 3 to 4 minutes. Add the ground beef, ground pork, and the onions and bacon and mix well. Sprinkle on the thyme and parsley. Season well with salt and freshly ground black pepper. Break in the two eggs and mix everything together well.
4 Choose a small oven dish with high sides and butter it. Stuff in the meat mixture and smooth the top level. Put in the oven and bake for 1-1/2 hours. Serve slices of the meatloaf with gravy, if you wish, and mashed potatoes and a vegetable such as carrots or spinach.
