Sweet Brie Fondue

INGREDIENTS:
8oz/250g Brie cheese, trimmed of rind and cubed 1 Tbsp/15ml all-purpose flour 3/4 cup/175ml dry white wine, divided
3 tbsp/45ml packed brown sugar 1 tsp/5ml ground cinnamon 2 tbsp/25ml brandy



1 In a large bowl, toss Brie cubes with flour until well coated. Set aside.
2 In a large saucepan, bring 1/2 cup (125ml) of the wine to a simmer over medium heat. Reduce heat to medium-low.
3 Add one-quarter of Brie cubes to saucepan, whisking constantly in a figure-eight motion until cheese is melted. Repeat procedure with second and third quarter of Brie cubes. Whisk in brown sugar and cinnamon. Add remaining Brie cubes and whisk until melted through.
4 Stir brandy into mixture. If too thick, andd enough of remaining white wine to achieve desired consistency. Transfer to fondue pot and serve immediately.
