| INGREDIENTS: | ||
| 3-4 chicken breast | 1 lime or 1/2 cup vinegar 5ml | 1 tsp salt |
| 1/2 tsp black pepper 2ml | 1 tsp garlic or (two cloves minced) | 1 stalk celery |
| 1 small green pepper (bell pepper) | 1/2 cup grated cheese (4 ozs) 56g | 1/4 cup low fat evaporated milk 62ml |
| 1-1/2 cup bread crumbs 168g | ||
| 1 | Clean chicken with lime or vinegar. |
| 2 | Remove skin from chicken (pound to flatten slightly). |
| 3 | Season to taste. |
| 4 | Prepare stuffing using all remaining ingredients above. (Put ingredients in blender or food processor). |
| 5 | Spoon stuffing in the middle of each breast-roll add cheese over to cover filling. |
| 6 | Tie or use turkey skewers, put on baking sheet. Bake for 30-35 minutes in a 350F/180C oven. |
