| INGREDIENTS: | ||
| 4 cups fresh-squeezed Seville orange juice | fresh-squeezed juice of 4 limes | 2 cups olive oil |
| 12 cloves garlic, crushed | 8 tbsp finely chopped onion | 4 tbsp dry sherry |
| 4 tsp salt | 4 tsp dried oregano | 2 tsp ground cumin |
| 1/4 cup minced fresh ginger root | ||
| 1 | Stir together Seville orange and lime juices. Blend in oil and then garlic, onion, sherry, salt, oregano, cumin and ginger root. Place in a bottle or jar with a tight-fitting lid and refrigerate at least 1 day before using. Keeps about 2 weeks in refrigerator. |
