Beans with Tomatoes

INGREDIENTS:
2 cups dried white beans 2 bay leaves 2 cloves
1 medium onion, chopped fine 2 cloves garlic, mashed 2 Tbs lard or vegetable oil
2 large tomatoes, diced 2 Tbs fresh parsley, chopped 1/2 tsp thyme



1 The day before serving, put the dried beans in a good deal of water to soak (add 1/2 tsp of baking soda if you have it).
2 The next day, drain the beans and put them in a large pot. Cover them with plenty of water. Add the bay leaves and cloves. Bring to a boil, reduce the heat to medium-low, partially cover, and let simmer till done, about 1 hour.
3 Drain the beans, reserving 1 cup of the cooking liquid. Discard the bay leaves and cloves.
4 Heat the lard or oil in a frying pan on medium-low. Add the onions and the garlic and fry, stirring occasionally, till almost golden. Add the diced tomatoes, mix well, and cook for 3 to 4 minutes.
5 Combine the tomato-onion mixture with the beans. Add the cup of reserved cooking liquid, the parsley, and the thyme. Season well with salt and freshly ground black pepper. Heat through on medium for about 10 minutes.
