| INGREDIENTS: | ||
| 1/4 onion, finely chopped | 1 shallot, minced | 1 garlic clove, minced |
| 3 teaspoons cold-pressed corn oil | 1 can (1 pound) tomatoe puree | 2 teaspoons oregano |
| 2 bay leaves | 2 teaspoons parsley, finely chopped | salt substitute (or salt) |

| 1 | In a medium saucepan over medium heat saute onion, shallot and garlic in oil. When vegetables are limp add remaining ingredients, including bay leaves and oregano. Do not add other seasonings. Simmer 30 minutes; stir occasionally to prevent sticking. Just before serving add parsley and seasoning. |
