Soft Vanilla Ice Cream

INGREDIENTS:
1/2 teaspoon unflavored gelatin 1 tablespoon water 1 cup low-fat milk
1/2 cup instant nonfat dry milk 1/2 cup sugar 1-1/2 cups half-and-half or whipping cream
1/2 teaspoon vanilla extract



1 In a Medium Saucepan, sprinkle gelatin over cold water; let stand one minute. Stir over very low heat until gelatin dissolves. Gradually add low-fat milk. Stir in dry milk and sugar; then half-and-half or whipping cream and vanilla. Pour into ice cream canister. Freeze in ice cream maker according to manufacturer's directions; or follow refrigerator-freezer instructions. Serve when mixture is firm enough to hold soft peaks.
