INGREDIENTS:
3 eggs 2 tablespoons butter 2 tablespoons flour
3 tablespoons cream 2 tablespoons icing sugar jam, crushed fresh, or drained
tinned or frozen fruit for filling



1 Beat the egg whites stiffly. Fold in the egg yolks, the sugar and the cream, add the flour carefully. In an ovenproof omelette pan you have meanwhile heated the butter, turn the pan around so that the butter is spread evenly. Put the mixture into the pan and into a fairly hot oven. It should remain there for about 15 minutes. Slip onto heated serving dish, and put the filling into one side and fold over the other (the filling should have at least room temperature, and so if you use jam it should also be heated). Serve at once.
