Arroz Con Pollo (Chicken with Rice-Mestizo Dish)

INGREDIENTS:
3 lbs chicken 1350g 1/2 cup vinegar or lime juice 50 ml 1 tsp salt 5 ml
1/2 tsp pepper 2 ml 1/4 cup olive oil 50 ml 1 medium onion (chopped)
2 tblsp margarine 2 clove garlic (crushed) 1 tomato
4 cups chicken broth or water 1000 ml 2 cups uncooked rice 500 ml 1 can green peas 16 ozs



1 Clean chicken with lime juice or vinegar. Cut up into serving pieces. Season to taste.
2 Heat pot or sauce pan, add olive oil, and brown chicken on all sides.
3 Saute onions in margarine.
4 Add onion, garlic, tomato and broth or water to chicken. Let boil and taste for seasoning.
5 When water boils, add rice. Cover and cook until rice grains are tender. Add green peas.
6 Add more liquid if grains are not tender.
