Peanut Brittle

INGREDIENTS:
2 cups sugar 1 cup light corn syrup 2-3/4 cups raw peanuts
1 teaspoon water 1 teaspoon vanilla extract 1/2 teaspoon baking soda



1 Combine sugar and corn syrup in a large Dutch oven. Cook over low heat to soft ball stage (240), washing down sugar crystals from sides of pan. Add peanuts; continue cooking over low heat, stirring constantly, to hard crack stage (300). Remove from heat. Stir in water, vanilla, and soda. Spread mixture evenly in a buttered 15x10x1-inch jellyroll pan. Let cool completely. Break into pieces.
