Spinach Madeleine

INGREDIENTS:
2 (10-ounce) packages frozen chopped spinach 1/4 cup butter or margarine 2 tablespoons all-purpose flour
2 tablespoons chopped onion 1/2 cup evaporated milk 1 (6-ounce) roll jalapeno cheese, sliced
1 tablespoon prepared horseradish 1 teaspoon Worcestershire sauce 3/4 teaspoon celery salt
1/2 teaspoon salt 1/2 teaspoon pepper 1/2 cup soft breadcrumbs



1 Cook spinach according to package directions. Drain well, reserving 1/2 cup liquid. Set aside.
2 Melt butter in a medium saucpan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Add chopped onion, and cook 1 minute. Gradually stir in milk and 1/2 cup reserved spinach liquid. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in jalapeno cheese, horseradish, Worcestershire sauce, celery salt, salt, and pepper. Cook, stirring constantly, until cheese melts. Stir in spinach.
3 Pour spinach mixture into a 1-1/2-quart casserole. Top with breadcrumbs. Bake at 350 for 20 minutes or until thoroughly heated. Serve with an assortment of fresh vegetables.
