"Hominy Cannelloni" On Wilted Greens |

| 8 tablespoons hot, cooked grits | 2 lasagna noodles (sheets), cooked, chilled, and cut in half | 1/2 cup grated mozzarella cheese |

| 1 | Preheat the oven to 450F. Put 1 tablespoon grits on the lower part of each half lasagna noodle. Spread evenly (and obviously the thicker the grits the better). Top with 1/8 cup grated mozzarella on each half noodle. (You can also use fresh mozzarella pinched and dotted on top, or any other cheese you like.) Roll up the lasagna noodles, keeping as much of the contents in as possible. Place the noodles on an oiled baking sheet. Season with the black pepepr to taste, and bake in the oven for about 5 minutes. Since everything is essentially already cooked, the most important thing is not to burn the noodles. Place each "cannelloni" on a bed of wilted greens. |
