| INGREDIENTS: | ||
| 2 cups all-purpose flour | 2/3 cup sugar | 2-1/4 teaspoons baking powder |
| 3/4 teaspoon salt | 1/4 teaspoon ground cinnamon | 1 egg |
| 2/3 cup milk | 3 tablespoons vegetable oil | 1 teaspoon grated lemon peel |
| 3/4 teaspoon vanilla | 1 cup chopped walnuts | 3/4 cup coarsely grated pared apple |
| 1 | In medium bowl, sift flour with sugar, baking powder, salt and cinnamon. In small bowl, beat egg; add milk, oil, lemon peel and vanilla. Stir into dry ingredients, mixing just until flour is moistened. Fold in walnuts and apple. Spoon batter into 12 greased 2-1/2-inch muffin cups. Bake in preheated 400 oven 20 to 25 minutes or until golden brown and wooden pick inserted in center comes out clean. |
