Apple-Walnut Muffin

INGREDIENTS:
2 cups all-purpose flour 2/3 cup sugar 2-1/4 teaspoons baking powder
3/4 teaspoon salt 1/4 teaspoon ground cinnamon 1 egg
2/3 cup milk 3 tablespoons vegetable oil 1 teaspoon grated lemon peel
3/4 teaspoon vanilla 1 cup chopped walnuts 3/4 cup coarsely grated pared apple



1 In medium bowl, sift flour with sugar, baking powder, salt and cinnamon. In small bowl, beat egg; add milk, oil, lemon peel and vanilla. Stir into dry ingredients, mixing just until flour is moistened. Fold in walnuts and apple. Spoon batter into 12 greased 2-1/2-inch muffin cups. Bake in preheated 400 oven 20 to 25 minutes or until golden brown and wooden pick inserted in center comes out clean.
