Hot Polish Chicory (Polska Cykoria na Coraco)

INGREDIENTS:
4 heads chicory 1 cup water salt and pepper to taste
1/2 tablespoon vinegar 1/2 cup butter 2 hard-cooked eggs, sieved or chopped
chopped parsley



1 Wash the chicory and remove the bitter centers. Boil the water with the salt, pepper and vinegar. Reduce heat, add the chicory and simmer for 10 to 15 minutes. Drain. Brown the butter in hot skillet. Arrange chicory on a warmed platter. Drizzle the browned butter over the chicory heads. Garnish with the sieved eggs and parsley.
