| 1 tbsp vegetable or peanut oil | 1 tsp hot bean paste or chilli sauce | 240g/8 oz/1 cup silken bean curd |
| 2 large spring onions (scallions), cut into 1/2cm/1/4 in pieces | 2 tbsp dark soy sauce | 1/2 tbsp light soy sauce |

| 1 | Heat the wok. Add the oil, then the hot bean paste. When it begins to smoke, add the bean curd, gently breaking it up into chunks. Turn for 1 minute over a high heat. |
| 2 | Turn down the heat, then add the spring onions and soy sauces and simmer for 2 minutes. Turn it out on to a dish and sprinkle with Sichuan pepper. Stir before serving. |
