| INGREDIENTS: | ||
| 250g/8 oz canned mandrain oranges in natural juice | 4 slices fresh root ginger | 2 tbsp Acacia honey |
| 2 small charartais, cantaloupe or galia melons | 2-3 kiwi fruit, peeled and sliced | 240 g/8 oz fresh long gan (dragon's eyes), or lychess, peeled and stoned |
| 1 | Drain the mandarin oranges, reserving their juice. Bring the juice gently to the boil with the ginger and honey. Then simmer and reduce until you have a runny syrup. Cool and refrigerate. |
| 2 | Cut the melons in half and discard the seeds, scoop out the flesh with a spoon so that it makes round balls. Reserve the melon skins. |
| 3 | Combine all the fruits and place inside the melon skins. Pour on the cooled syrup and replace the melon lid. Serve 1/2 melon per person. |
