| INGREDIENTS: | ||
| 2 cups fresh or unsweetened frozen blueberries | 1/2 cup orange juice | 1 teaspoon unflavored gelatin |
| 1/4 cup water | 1/4 teaspoon grated orange peel | 2 tablespsoons honey |
| 1/4 cup sugar | 1/2 cup miniature marshmallows, halved | 1 cup plain low-fat yogurt, stirred |
| 1 | IN A BLENDER OR FOOD PROCESSOR: Fited with a metal blade, finely chop blueberries with orange juice; set aside. In small saucepan, sprinkle gelatin over water; let stand 1 minute. Cook and stir over low heat until gelatin dissolves. Remove from heat; add orange peel, honey, sugar, pureed berry mixture, marshmallows, and yogurt. Freeze in ice cream maker according to manufacturer's directions; or follow refrigerator-freezer instructions. |
