Zesty Lime Chicken

INGREDIENTS:
1/4 cup/50ml olive oil 1/4 cup/50ml white wine 2 tsp/10ml lime juice
1 tsp/5ml finely minced lime zest 1 clove garlic, minced 1/2 tsp/2ml red pepper flakes
1/4 tsp/1ml granulated sugar salt and freshly ground black pepper to taste 1 lb/500g boneless skinless chicken breasts, cut into 1-inch (2.5 cm) strips
oil for fondue



1 In a bowl combine oil, wine, lime juice, lime zest, garlic, red pepper flakes and sugar; mix well.
2 In a shallow casserole, pour marinade over chicken, tossing to coat well. Cover and refrigerate for at least 1 hour.
3 In a saucepan heat oil to 375 F (190 C) and transfer to fondue pot (or heat oil in an electric fondue). Do not fill fondue pot more than half full.
4 Spear chicken with fondue fork and fondue 1 to 2 minutes or until cooked through.
