| INGREDIENTS: | ||
| 1/4 cup/50ml olive oil | 1/4 cup/50ml white wine | 2 tsp/10ml lime juice |
| 1 tsp/5ml finely minced lime zest | 1 clove garlic, minced | 1/2 tsp/2ml red pepper flakes |
| 1/4 tsp/1ml granulated sugar | salt and freshly ground black pepper to taste | 1 lb/500g boneless skinless chicken breasts, cut into 1-inch (2.5 cm) strips |

| 1 | In a bowl combine oil, wine, lime juice, lime zest, garlic, red pepper flakes and sugar; mix well. |
| 2 | In a shallow casserole, pour marinade over chicken, tossing to coat well. Cover and refrigerate for at least 1 hour. |
| 3 | In a saucepan heat oil to 375 F (190 C) and transfer to fondue pot (or heat oil in an electric fondue). Do not fill fondue pot more than half full. |
