Cherry Loin Roast

INGREDIENTS:
4 to 5 pounds loin roast (loin end) 1 teaspoon salt 1/2 teaspoon ground cloves
1/4 teaspoon pepper 1/2 cup cherry preserves



1 Place roast fat side up on rack in shallow pan. Insert meat thermometer in center of roast not touching the bone. Roast uncovered in slow oven (325 F), allowing 30 to 35 minutes per pound, or until thermometer registers 185 F. Thirty minutes before roast is done, sprinkle with salt, cloves and pepper. Spread cherry peserves, about 1/2-inch thick, over top. Continue roasting until done.
