Meat Loaf

INGREDIENTS:
1-1/2 lbs ground meat 675g 1 cup bread crumbs 112g 1 small onion (grated/minced)
1 small or half sweet pepper (chopped) 1 tsp salt 5ml 1/2 tsp pepper and thyme 2ml
2 tblsps ketchup (diluted with 1/2 cup water) 2 tblsp Worchester sauce 2 large cabbage leaves
2-3 hard boiled eggs



1 In mixing bowl put meat and all other seasonings. Leave 1/2 cup bread crumbs to cover top.
2 Mix well to a soft consistency.
3 Grease loaf tin and line with cabbage leaves.
4 Put 1/2 of meat mixture in tin. Put boil eggs on top. Cover with other half of mixture, press down firmly. Cover top with bread crumbs.
5 Dot with margarine or use two rashers of bacon.
6 Bake at 350 F/180C for 40-45 minutes or until done. Serve hot-Use as a main dish.
