| INGREDIENTS: | ||
| 2 lbs pork ribs or chops 900g | 1 teaspoon salt or to taste 5ml | 2 cloves garlic (crushed) |
| 1/2 cup brown sugar 112g | 2 tablespoon soy sauce 30ml | 1/3 cup catsup 75ml |
| 2/3 cup vinegar 150ml (use some for cleaning meat) | 1 cup pineapple chunk 250ml | 2 stalks celery (chopped small) |
| 2 small carrots (diced or chopped small) | 4 ozs green peas/string beans (cut small) 112g | |
| 1 | Clean pork with lime juice or vinegar. |
| 2 | Rub pork with salt only. Put in a large foil lined pan. Cook for about 45 minutes-1 hour at 350F/180 C. |
| 3 | Remove from oven-Drain off excess fat. |
| 4 | Mix all other ingredients to make a sauce. |
| 5 | Cover meat with sauce-Continue baking for another 1-1/2 hours. Baste several times during cooking. |
